Warm me up


It's officially sweater weather.
Had our first snow the other day- big, fluffy flakes.
The prettiest in my opinion.

Dream kitchen












I would kill for any of these.
Cozy, clean, welcoming...
and with an island.
These are cream my pants kitchens.

Chicken Marsala has always been a comfort meal for me.
Mushrooms and pasta, what could be finer.
So easy to make- takes about a half hour total...
Who needs Easy Mac? *Sick*
Filet two chicken breasts
Cover in saran and pound out til 1/2" thick
Dredge in flour ( I mix in S&P and a little chicken seasoning)
Heat veggie oil over medium heat
Fry chicken until golden brown
Set aside on paper towel.

Now for the sauce *drool*

Melt butter over med/low heat
Drop in your shrooms- I like a portabella, crimini mix
Saute until golden brown
Pour in 1/3 cup chicken stock
1/2 cup marsala- 1/3 cup dry white wine
Boil out alcohol- roughly 3 min
Let reduce.
If sauce is too thin, add cornstarch/cold water mixture
Add pat of butter at last minute as well as 2 tbsp of heavy cream.
Pour over chicken and pasta of choice.
Add generous amount of parm and proceed to gorge.

Brightly Twisted.




This post is testament to the assumption
that one piece can totally change your outfit.

My friend works at an amazing boutique called Brightly Twisted.
They specialize in hand dyed items like scarves and apparel.

She has given me 3 pieces from the collection.
2 summer scarves and 1 from the fall line.
This beautiful grey and brown scarf is so dang soft
and really compliments my hair
and makes my boring (OLD) denim jacket
fall appropriate.

It's getting colder.
Which means I crave soup.
Tonight was italian wedding.
The meatballs were crazy good.
I made them bite-size so I could have more...always thinking.

And yes, I was snacking on handfuls of prosciutto and romano. Don't judge.
You need to taste your ingredients!

For the meatballs:

-Italian sausage
-1 egg
-Milk
-Pecorino
-Parm
-Breadcrumbs
-Parsley
-Minced garlic
-S&P to taste

Mix together gently with fork and roll into small balls.
Place on baking sheet (I greased with butter- SO key)
Pop in 350 degree oven.
Bake 20 min. Or til brown and crispy on the outside.

Soup:

- 8 cups good chicken stock
-Diced tomatoes
- 2 carrots diced
-Prosciutto (optional but damn good)
- Small onion diced
-2 tbsp dill
- Cup dry white wine
-1 cup small pasta
- Baby spinach

Saute onion/carrot/garlic in EVOO
Add tomato/ prosciutto- simmer for 5 min
Add stock and wine and bring to boil
Add pasta, cook til tender.
Add dill and meatballs
Wilt in spinach
Serve with parm on top.

Great for cold night with a big ass loaf of crusty bread. Booyah.


Halloweenie



Not the biggest fan of Halloween.
I'm usually bartending for the festivities and
am forced to purchase stupid costumes to fit the theme of the night.
$ spent on costumes > $ made on the weekend.

BUT
I was managing at the gym today and one very sweet member
managed to make my day by bringing in an entire plate
FULL of brownies, no bakes, rice crispies and pb bars.
Well, no shit. Fatty is happy.

... Since I'm obsessed with X-mas, I carved Jack from Nightmare Before Xmas.
Pumpkin seeds are the bomb.com.

Love the hog.


Viet food. My weakness. Korean by birth, yet infinity for spring rolls- steaming, huge bowls of pho and fish sauce on pretty much everything.

bún chá giò thit nu'óng.
Charbroilled pork, vermicelli and cold salad (cucumber/lettuce/bean sprout).
I normally get pho but we had already put away a significant amount of dim sum, so I decided to go with a cold, "less filling" dish.
(Because I'm so concerned with food portion and self-control)
The noodle bowl arrives with everything arranged on top
then you toss it all with the fish sauce.
The grilled pork is juicy and salty while the bean sprouts and lettuce offer
a fresh crispness and the noodles soak up
the sweet- tangy- spicy nuoc cham.
Try it and tell me you have left overs.
